I’ve been busy 2 days ago with office work that i wasn’t able to place an order in any store for a themed cake for my son Gavin’s 3rd birthday on June 18. My hubby and I thought of holding a simple family gathering to celebrate his birthday and just spend on his presents instead. Since he’s very fond of Thomas and Friends, and lately fixated with marbles (via youtube), we decided to buy him a marble toy and another Thomas as a present to add to his collection of trains.
So I decided to buy him just a regular cake. Then I was surfing the internet and browsed True Confections site (which I love to watch) and read about Chef Jackie Po’s response to one of the readers who asked about a ready made fondant. She said that imported baking needs supplier Wilton is being distributed by Gourdo’s. I inquired with Gourdo’s The Fort and luckily they have what i have in mind. I felt guilty that I haven’t planned for Gav’s birthday cake so I thought of making a train cake for him. I haven’t mentioned that Gavin always watches trains via youtube and we came across an instructional video on “how to make a train birthday cake.” It was my inspiration for the cake.

So we headed to Gourdo’s at the Fort and bought the Wilton ready-to-use rolled fondant in primary colors (multipack).
I’m not a baker or a cake decorator but i’m willing to experiment for my son’s special day. So i bought an 8×12″ chocolate cake glazed with boiled icing from Goldilocks and use it as my base for my very colourful train cake. For the coaches and train, I used store-bought butter slices and cover it with the fondant. Unfortunately, since i am unexperienced and have no smoother to smoothen out the fondant, ergo it didn’t come out like the pro-made fondant cake. I decorated it with M&Ms, used Oishi sponge crunch as its wheels and topped the coaches with chocolate morsels and marshmallows. (btw, the big space is for the candles).
It’s quite challenging but i surely had fun creating the train cake. It was like playing playdoh.
